I was in a fall mood this morning, so I made some pumpkin flavored coffee with vanilla soy milk. I usually drink my coffee black, but this morning I was feeling like having something a little sweet after my routine cup of water after I woke up.
I was also craving some veggies. I boiled then simmered some frozen purple hull peas and cooked up some stir-fry veggies and hashbrowns. I topped all of that with a sauce I made out of 2 tablespoons of hummus, water to thin it out, and a bit of sriracha sauce.
I LOVE dumplings. I could eat them every day, but they are a pain to make. Our local Winco has some pre-made ones in stock that all you have to do is pan-fry them and then add water to steam them and they are so delicious. I had some with leftover white rice for lunch.
I lost track of time, so again I threw some stuff together. I made a burrito with some of the purple hull peas from earlier, spinach, tofu, and hummus. Nothing fancy, but really tasty.
That’s everything I ate this day. It was a lazy day at home working on my computer, so these meals were quick and simple but I was also trying to make them nutritious.
