What I Ate Today 10.18

Today was a lazy day at home, so a good day to post what I ate.

Breakfast: A quick bowl of nice cream. I blended 2 frozen bananas, a small handful of blueberries, a splash of cashew milk, cinnamon, and vanilla extract. I topped it with a small spoonful of flaxseed meal, coconut chips, and toasted almonds.

Lunch: Pumpkin macaroni with spinach. I think I’ve perfected making a “cheesy” pumpkin sauce so I’m definitely going to post a recipe for it soon. It’s mostly pumpkin, cashews, cashew milk, lots of spices, and nutritional yeast. Super creamy and delicious, it deserves it’s own post.

Dinner: For dinner I just ate a blueberry bagel with some peanut butter on it. I really did not feel like making dinner so I kept it simple.
